Dinner was a success! If you enjoy whole wheat pasta, you'll probably enjoy whole wheat, low fat vegetable lasagna.


30- 32 oz. part skim ricotta cheese
16 oz. part skim mozarella cheese
2 eggs
Whole wheat lasagna
Two jars tomato sauce
1 zuchinni
1 yellow pepper

Pre-heat oven to 350.

Mix the cheeses and eggs in a bowl. Coat the bottom of the tray with sauce. Add a layer of pasta (do not pre-cook pasta). Add a layer of cheese. Add a layer of thinly sliced zucchini. Add a layer of sauce. Add a layer of pasta. Add a layer of cheese. Add a layer of yellow pepper. Add a layer of sauce. Add a layer of pasta. Add a layer of cheese. Ad a tiny bit of sauce to the top.

Cover tray with tinfoil and cook for 30 minutes. Remove tinfoil and cook, uncovered, for another 15 mintues. Remove from oven and let stand 10- 15 minutes.

Cross your fingers and serve.


There's something fantastically amusing about the fact that I'm sharing a recipe. I don't think I've turned on my oven for at least four months. If you do try it, I'd love to know what you think.

[livejournal.com profile] sugard312 and I met at Suede about a year and a half ago so that seems to be our destination of choice when we're out together. Tonight I saw the most beautiful man. So beautiful. Couldn't breathe or speak beautiful. Of course, I had no game and simply danced in his general vicinity for most of the night. Ended up meeting another guy who was more than happy to share his bottle of vodka and entertained me for a bit but I need to understand the cosmic laws that keep us from talking to the guys we're actually interested in.

I'm eating a bagel, drinking some water, and going to bed where I will, hopefully, dream of the beautiful man I didn't have the balls to speak to tonight. Argh! At the very least, I should have invited him over for some lasagna. :)
